XV® Technology

Converts a traditional 20° edge into a more precise, sharper high-performance edge with a 15° angle. The 15° angle is typical for Asian knives such as Santoku and Nakiri and is now also common in many European knives.

Diamond grinding discs

The grinding discs of GRAEF knife sharpeners are diamond-coated. This ensures that knife blades are sharpened gently, quickly and easily. The low grinding speed prevents the blade from overheating during sharpening.

Trizor® - the high-performance cutting edge

Three consecutive sharpening stages create a triple-beveled edge. The bevels are set at different angles, forming a supportive, curved blade with a triple edge structure inspired by a Gothic arch.

Elastomer blade guide

The elastomer blade guide ensures precise and safe sharpening, as the knife is guided by the handle just like when cutting. Exact angle control allows quick and easy sharpening of various knife types, even without prior experience.

15° grinding angle

Sharpening with this model creates a strong, ultra-sharp and long-lasting multi-phase edge with a 15° grinding angle. The blade is ground to a spherically finish.

GRAEF knife sharpener CX125 - a new 15° blade for European knives

GRAEF knife sharpeners use diamond dust on the grinding discs to minimise material removal from the knife. Compared to other sharpeners, the grinding discs run much slower. This results in less friction on the knife steel and prevents the blade from annealing.

Elastomer blade guide

The CX125 with triple bevel grinding has precise, elastic angle guides for every knife quality. This creates an "arc-shaped grind" for unrivalled sharpness and durability. This allows the blade to be sharpened much more precisely and sharper than with comparable devices. Thanks to XV technology, knife blades are quickly and easily converted from 20° to ultra-sharp 15°.

3-stage sharpening

The CX125 knife sharpener enables three sharpening steps: During pre-sharpening, it grinds the knife with its diamond discs and creates a new burr for the cutting edge. Thanks to precise elastomer guidance of the blade, a basic angle of 15 degrees is created. In stage 2, the new cutting edge is built up. This creates a convex, i.e. pointed shape, which gives the cutting edge particular stability and durability. Polishing with ceramic honing discs in turn makes the blade razor-sharp.
